are we talking PvP or PvM?
in PvP axes are generally chosen because you can't make a Beast (the standard off-hand weapon for a bvc) in a sword, however Grief can be made in both.
the main exception is a BvB, which uses a shield. a Grief colly sword has much higher minimum damage than a zerk (but getting a really, really good grief colly sword isn't easy. you need 39ias AND a good damage roll)
if it's PvM, use whichever you prefer, they'll both work just fine.

This depends on what you want your barb to be able to do efficiently. For pvm it's entirely up to you. For pvp:
Reasons to use a sword
1. greater range
2. greater max damage
3. bvb requires more blocking (sword/shield combo)
Reasons to use an axe
1. you can't make BEAST in a sword
2. speed (ww is based on the weapon IAS)
3. versatility (you can switch out weps for each situation)
Most sword users are gonna be pvm or bvb. They can be bva but they probably won't do very well. Axes are simply more versatile, they can pvm and pvp just as well. And being able to change up weapons for every situation makes the greatly disadvantaged barbarian class that much less disadvantaged.
