well, to tell you the truth, by the time you get high enough level to use griz set there are a ton of better options out there for you. Here's what I use and it works well enough

Frost zealot:
Duress Boneweave
Giulummes face
Cresent Moon phase blade
goreriders
dracul's grasp
verdungo's/t-gods
rare ring and ammy with resist all
raven frost
HOZ
-bunch of crushing blow, open wounds, static from Cresent moon, really mows them down.

Fanatic zealot
shaefers hammer/deathcarver
g-angel
crown of ages
gore riders
verdungo's
Dracul's
HOZ
-hit things until life tap triggers making you immune to death and wait for everything to die. pretty easy.

ok, in that case I would trade one of the griz pieces for a complete sigons set and start collecting p-gems to buy things like rockstopper, butchers pupil, dureals shell, a decent belt etc. trade other griz pieces for fairly costly things like draculs grasp and gore riders. although griz set is rare, the pieces arent really worth much, so I dont think that trades like this are all that unfair for you, especially when you think of it as trading stuff you dont need for stuff you do.

I would also try to concentrate on building a fanatic zealot as they are less dependent on +skills to be able to survive. mf shenk, eldrich and meph in NM for a while to accumulate better gear. the pits in hell are also extremely easy for a zealot as long as you get draculs grasp

anyhow. good luck

Hmm...not sure I agree on that, but I suspect this is a debate that could go on for ages. The first character I was ever able to complete hell with (I generally play solo) was a frost zealot--my fanat. pally started to struggle midway through hell. Keep in mind that I was playing untwinked, basically just with what I was finding/could trade for. I found that even without much +skills gear, I was having an easier time in hell with the frosty than I had with any other char I had ever played. My fanat. pally, even with a ton of leech, would get overwhelmed by large groups too quickly, whereas with the frosty I could pick off monsters one at a time if need be. A little bit of crushing blow and some leech here and there and I was good to go.

Its probably a matter of personal preference and playing style though. Read up on the guides in the stategy forums and make your decision based on them--they'll probably give you a better idea what playing either one is like than an endless debate about which type of pally is better.
