Way to Remove Socket From Weapon?

Hi all I'm looking to find some Runic talons with 2, Strength runeword, sockets and no one seems to have them. Is there a way to remove a socket so that it only has 2 instead of 3?

You can't remove existing sockets.

no, that's not possible for normal items

the only thing you can do is find them that way or socket them that way. once socketed you will not be able to change the number of sockets,
there are few exceptions to this, when the item in question is blue:

if you want to reduce an artisans magic item with three sockets, simply reroll it with the chippy or flawless recipe, then it'll have a chance of becoming only one socket or two

unfortunately you can't put runewords in magic items.

The Horadric Cube recipe for socketing weapons (ral + amn + P Amethyst) can potentially yield less than the max number of sockets the item can get. So you can find some normal Runic Talons with no sockets at all and try that.

It's also worth nothing that if you repair lower quality (cracked, etc.) Runic Talons, they will have a max number of sockets of 2.
