If that's the case.. I would not use your points until you get gear. Just let them save up.... when you find an item you need that you don't have stats for... adjust accordingly. Just be careful you don't find some item that requires an insane high amout of dex or str... you pump it up... then letter find a better item with much lower requirements and now you've wasted a lot of points. I know it's always a judgement call... but look on the Arreat summit site for what you 'wish' you could get.... then when you find other gear to use... if it's way different then your wish list... you may wanna consider if it's worth it.
Bump what the Govenah said. When I start a new character, I plan his end-game gear out from the beginning. For example, I wanted my Avenger to use Shaft + Gaze. Then I decided on Runemaster as a weapon. Then I filled in the rest of the equipment choiecs to make sure I would have enough IAS, resists, etc. By planning like that I know what I'm going to need for Str, Dex, etc, and I can assign my points accordingly.
Also as previously mentioned, you may want to save yourself 25 points or so as a reserve fund in case you make a change or an adjustment later. Don't spend those points until you are sure you won't need them elsewhere!
