Loaded down in Act IV...

I'm playing a single player game - in act IV for the first time. I'm not really having trouble with any monsters or anything. I've just destroyed Mephisto's soulstone. The problem is - I'm not finding anything that is socketed - none of my armor or weapons have sockets because my equipment has been better than socketed things I've found in the past. The result is I am busting with all kinds of jewels and skulls with no place to put them. I can't use the socketing formulas because I have no perfect gems yet. I'm not on battle.net so I can't trade. Should I just start selling gems in town or what? I don't really need the gold either.

If room is what you need, make a gem mule character and download ATMA from its sticky in the single player forum. Then move all the gems to that character. The most useful gems are perfects, but the others can be used for upgrading runes.

Yes, as above, download ATMA from here: http://www.rpgforums.net/showthread.php?t=265765

But there is no need to make mule characters. Simply make a "stash" ( in 1.10 or whatever D2 version you are playing) in ATMA and you can keep a near infinite number of items in there. For SP, I actually have a few stashes. One for rares and uniques/set pieces, and one for socketed items, and one for normal or blue items I want to keep. You can keep gold in ATMA (Bank of ATMA) also and you can mule gold (or any other items) to other characters.

Then go to the SP forum and make an introductory post and you will be warmly welcomed.

Regarding what to do with the gems you already have, you can upgrade them with the cube or sell them. I usually sell chipped gems. I keep gems above that and upgrade them and use them for rerolling charms.

Chipped gems would be very useful in your case, since you're playing a barb, who could use some better weapons. There's a cube recipe that rerolls any magical weapon's mods, and gives it one to two sockets. It's three chipped gems and the magical weapon itself, just transmuted in the cube. You can do this as many times as you want, provided you have enough chipped gems.

Keep rolling a good weapon, and you might get lucky with some good mods.
