Zons can dodge smite. I have dodged a few before.

The only way to dodge smite is by hexing the monster skill "submerge" onto your character (the ONLY thing in the game that can hit this state are "chest trap fireballs"). there were/are certain amounts of negative defense that will cause smite to miss, but the amazon dodges are not one of them.
The entire 1.10+ open battle.net dueling scene is based upon a few general concepts, one of wich is using NV skills A/E/D at 100% (or higher) to make damn sure you aren't getting hit by anything but holy auras and smite in general, although certain VERY specific combinations of -%target defense and AR values can hit the common NV vaule (127).
