How well would this do?

Well ive always like conviction cus it gives no troubles vs immunes and AR.

However i dont like the attack speed so im asking if using Beast would be ok, running conviction/vengeance with beast for fanat aura, or maybe even stack it on a bow for act1 merc

Beast is rather slow, you can use an act 1 merc with faith and grief(if a zealot) or ebotdz and hit a decent attack speed.
