When in a game press the ESC key then select Options and then Config Controls. This brings up a screen listed what keys are assigned to which actions. Highlight an action and press a key, now that key is binded to the action. So for example you can set your skills to the QWERTY keys instead of F1-F8.

Left click on the skill icon in the status bar at the bottom of the screen. Now, hover over the skill you want to be used with F1, then press F1. That should bind F1 to that skill.
But, as Mursilis said, you don't have to use the function keys. I use
qwer
asdf
zxcv
And I set the character screen to Y and the quest screen to U. This is helpful if you have any characters with lots of skills (most of mine do). Then, Q is always teleport (on sorcs anyway) and R is always townportal.

For another example (and for those like me who can't type) having the mouse in right hand I use my left hand on the board:
ASDF for my belt
ZXCVBNGHJ for skills
ZX (& C if needed) for main attacks (left click)
V& rest for right click - power-ups; auras; time-delay casts; secondary attacks; escapes; et-al
If I have summons I still use the "F1" - (whatever I need) for keys
About the only key needed to re-map (that I use) is the character "C" key which I change to "K".
And as SS said it's a good idea to map all your characters the same so you don't forget what's what - (For all my Zon's V is always Valk)

In the lower right and left corners of your screen are icons representing the skill currently assigned to the right and left mouse buttons, respectively. Click on this icon and an array of icons will appear showing each skill that could potentially be assigned to that mouse button. If you hover the mouse over a particular skill and press the F1 button, that will assign the F1 button to that skill. So when you press F1 that skill is suddenly the one available for the mouse button. Rinse and repeat for F2-8.
